There are really those days when you do not feel like cooking or you are just too lazy to buy lots of ingredients and spend hours to prepare for a decent meal. Luckily, KC Concepcion shared her go-to meal when she was still a working student in Paris.
The actress shared that cooking cacio e pepe (cheese and pepper) is super easy and the only ingredient that you need is literally cheese, pepper, and pasta.
“Kasi nagtrabaho ako sa Paris when I was a working student. I had a job as a secretary sa isang press agency. And apart from that, nag-stint din ako as a concierge, and I was teaching English sa Chinatown,” she shared.
“So lagi talaga akong may baon and ito ‘yung pinaka go-to ko noong time na ‘yun. Kasi madali lang siya and it’s super minimalist, konti lang ang ingredients na kailangan,” she added.
Her version of cacio e pepe would include spaghetti noodles, black pepper, chili peppers, Parmigiano Reggiano and Pecorino Romano cheeses.
“I personally love Pecorino Romano. It’s saltier than Parmesan but at the same time they both have a nutty taste,” KC said, adding that she also learned to garnish the pasta with lemon and olive oil.
Aside from this dish isn’t time consuming, the jewelry maker also shared some tips in achieving an al dente pasta. You wouldn’t even need a cream to make this dish creamier, just add pasta water!
