Bibingka and Puto Bumbong Waffle will be your new favorite Christmas comfort food

As soon as Simbang Gabi starts, vendors start selling puto bumbong and bibingka outside or near the church grounds. While these are local delicacies that you can get all year round, the popularity of these two boosts around Christmas. It just feels right to eat puto bumbong and bibingka in December, especially if you grew up attending Misa de Gallo. 

However, what will these two taste like as a waffle? Waffles are a filling breakfast meal and these two local delicacies are also best eaten early in the morning, so why not combine them? 

Goto Monster did combine them and the result of it is a yummy reinvention of Christmas comfort food. 

The Bibingka Waffle is topped with salted caramel sauce, sweetened coconut strips (bukayo), and salted egg. The taste of Bibingka is incorporated into the waffle since they create their own waffle mix. 

The Puto Bumbong Waffle, on the other hand, is topped with bukayo, nuts, muscovado sugar, and melted Dari Creme buttermilk. The toppings make every bite an interesting one because of all the different textures. The waffles themselves are ube flavored, and they incorporate ingredients of puto bumbong to make it taste as close to the original. 

Both the Bibingka and the Puto Bumbong Waffle are topped with ube halaya ice cream. It’s a dessert and a breakfast meal all in one! A serving of each costs PHP 200
