This perfectly curated drink has cacao and whiskey in it.
Delve into the darkness with The Macallan’s Harmony Collection: Rich Cacao, giving our palates another avenue to dive into that sweet yet bitter sensation.
The Macallan never fails to surprise its drinkers. This time, it gives dark chocolate lovers and whiskey sommelier titos common ground to enjoy a few glasses. Its smell gives a sweet, bitter, and zesty hint; the drink itself is made even better by its long, rich chocolate finish.
This treat was made possible by Macallan’s whiskey maker Polly Logan and prominent sweets figures like Casa Cacao co-founder chef Jordi Roca and master chocolatier Damian Allsop.
According to Logan, “Working in collaboration with Jordi Roca–acknowledged as one of the best and most creative pastry chefs in the world–and exceptional chocolatier Damian Allsop, I went on a journey of discovery, learning of the craftsmanship, passion, and creativity that goes into making chocolate.”
Emphasizing her love for spirits and sweets, Polly Logan said she sees a great synergy between making whiskey and chocolate. She added that both need time and attention to detail.  Â
Jordi Roca noted that this project challenged their creativity. “We were allowed to play with cacao, which is one of my passions. Being able to inspire a whiskey and to create a unique tasting experience has been wonderful,” he said.
Logan was all too eager to talk about the process of making it.
“I sought out a specific chocolate note in The Macallan’s traditional sherry-seasoned European oak casks. I then combined it with a vanilla note imparted by sherry-seasoned American oak casks to sweeten the slightly bitter chocolate note I found,” she shared.
Apart from a flash flood of flavors that will delight hooch connoisseurs, its packaging is something to look forward to. The distillery is changing the spirits game by expressing empathy with nature, wrapping this drink in an eco-friendly façade.
As a tribute to the recipe’s roots, they made a box using ingredients that went into the creation of this whiskey, such as discarded cacao husks. Wine drinkers can go green with this one since its packaging is recyclable and biodegradable.
