Kombucha is essentially green or black tea that is fermented with SCOBY, or symbiotic colony of bacteria and yeast, and sugar. After being left alone for a period of one week to one month, the mixture then transforms into a refreshingly tart and fizzy drink.

The practice dates all the way back to 2,000 years ago in China and has now evolved into a new beverage empire.

Health nuts especially love kombucha because the live culture present in the formula purportedly leads to healthier digestion, detoxification, and less inflammation in the body. This means less risk of bloat and upset stomach.

And because the heart of the drink is actually tea, the benefits stretch to a strengthened immune system and reduced blood pressure. Those with diabetes have also found that, after drinking kombucha regularly, their blood sugar levels stabilized.

Here in the Philippines, the kombucha market has grown exponentially as more and more people start to look after their health. Several homegrown kombucha companies, like The Kombucha Project PH and Wicked Moon Kombucha, have taken to brewing their own concoctions at home and selling online.

Aside from its health benefits, kombucha is also popular for being a great alternative to soda. The fizzy, carbonated drink comes in a wide variety of flavors, which makes it easy for customers to try out new drinks.
