5 Panaderya Recipes You Can Bake at Home

People are trying to make the most out of their free time, and most have taken on hobbies to improve themselves during this quarantine. One such activity that has garnered the attention of many is baking, as it’s a nice way to enjoy the fruits of one’s labor via baked goods.

If you’re looking to try your hand at baking, try starting with baked goods you see at your local bakery. To name and cite a few, here are some panaderya recipes you can make yourself!

1/4 cup warm water, 1 package (1/4 ounce) active dry yeast, 1 cup lukewarm milk, 2 ounces butter, room temperature, 2 eggs, beaten, 1/2 cup sugar, 1-1/2 teaspoons salt, 4 1/4 cups flour and 1/4 to 1/2 cup more for kneading, 1/2 cup fine breadcrumbs

Simple but definitely a crowd favorite! You can never go wrong with pandesal. To make, combine milk, butter, eggs, sugar, and salt, and then add in the beaten milk, flour, and yeast mixture. Combine all these ingredients to make a dough, and then knead until smooth. Set it aside to let it rise, cut them up, and then bake in 175°C oven for about 15-20 minute.

4 large eggs, 1/2 teaspoon cream of tartar, 1/2 cup granulated sugar, 1/4 cup vegetable oil, 1/3 cup fresh milk, 1 1/8 cup cake flour, 1 1/2 teaspoon baking powder,  1/2 teaspoon salt, 1 cup powdered sugar, 2-3 tablespoons melted butter, granulated sugar

The Mamon is the Philippines’ version of a chiffon cake. To bake, beat egg white until foamy and then add in the cream of tartar and the granulated sugar. In a separate bowl, mix egg yolks, oil, and milk until frothy. Sift in the dry ingredients and then beat together for about 3-4 minutes. Fold in the egg whites into the flour and egg yolk mixture, and then fill the mamon tins with the batter. Bake in a 170°C oven for 25-30 minutes.

Spanish Bread

Bread: 3 cups high grade flour or bread flour, 2 tsp bread yeast, 1/4 cup sugar, 1 tsp salt, 3/4 cup warm milk, 1/4 cup melted butter, 1 egg, 1/2 cup bread crumbs. 

Filling: 1/2 cup melted butter or margarine, 1 tbsp flour, 1 cup bread crumbs, 1/4 cup milk, 1 cup brown sugar, 1/4 teaspoon salt

Another popular bread in panaderyas is the Spanish Bread. The sugar and margarine make this a sweet one. To bake, combine all dry ingredients and set aside. For the liquid mixture, whisk together the sugar and melted butter, and then add it to the yeast and water mixture. Mix the dry mixture with the liquid mixture until it forms a dough. Knead for 10 minutes and then set it aside to rise. Make the sweet filling and then spread it onto the dough. Divide the dough and then bake in a 180°C oven for 12 minutes.

Bread: 1 cup milk, 1/2 cup + 2 tablespoons sugar, 1/2 cup shortening, 1 envelope active dry yeast proofed in 1/4 cup warm water, 3 1/2 cup flour, 3 egg yolks, 1/4 tablespoon salt, 1/4 cup butter 

Toppings: 1/2 cup butter, 1/2 cup powdered sugar, 1 cup grated cheese

Ensaymada is a sweet pastry topped with butter, sugar, and lots of cheese. To make, mix together milk, shortening, sugar, and salt, then mix in half of the flour and the yeast mixture at medium speed. Add the egg yolks and the remaining flour, then mix until the dough is sticky. Set it aside until it doubles in size. Cut dough into small logs and then coil them into a spiral before baking in a 150°C oven for 20-25 minutes. Cover with combined topping ingredients.

4 cups bread flour or all purpose flour, 2 tsp instant yeast, 1/2 cup warm water, 1/2 cup warm milk, 1 large egg, 1/2 cup milk powder, 2/3 cup granulated sugar, 1 tsp salt, 4 tbsp softened  butter

Monay is a dense bread known for its indentation in the middle that creates two round bread halves. To make, first create the yeast mixture by combining the warm water, tablespoon of sugar, and the instant yeast. In a separate bowl, whisk dry ingredients together and then pour in the milk, butter, and yeast mixture. Mix on low speed until dough becomes smooth. Knead dough until smooth, and then shape them into round balls. After setting aside the dough balls to rise, slash down the middle of the ball and then let it rest again for 10 more minutes. Brush with egg wash and then bake in 150°C for about 20 minutes.
