The restaurant gets its name from owner and Chef Hannah Herrera-Bagatsing. Food runs in her blood. Her grandmother owned the famed Tres Hermanas restaurant in the 1950s. Consequently, it’s no surprise that some of her grandmother’s dishes made their way into H-Cuisine’s menu. The callos and lengua are available in the same style her grandmother prepared them in.
That said, H-Cuisine’s primary focus is on continental food. It’s been that way since it opened its doors eleven years ago. Regulars love the Chicken Mushroom Melt and Eggplant Mousakka. Other popular dishes include the Osso Bucco with Mashed Potatoes and Roasted Chicken. The Teriyaki Glazed Milkfish Belly is also a bestseller.
The ‘H’ in the restaurant’s name might as well stand for “homey.” Its ambiance is one of the reasons why it has been around for such a long time. For example, the interior is done in blues and muted yellows. The second floor has a cozy vibe, with its round tables. It’s great for private functions like birthdays, meetings, and the like. Both floors are well-lit too.

H Cuisine’s signature dish is a recipe Chef Herrera-Bagatsing came up with on her own. The meat is slow-roasted from 12 to 14 hours beforehand. The exact timing varies based on the size of the slab, though the servings are generally uniform.
It’s moist, smoky, flavorful, and fork-tender thanks to its cooked fat. The finish is a little charred, but not burnt or off-putting. It’s served on a rack with a lit tea light candle under it! That way, the dish stays warm throughout the meal.
